One ingredient: raw wildflower honey from the meadows of northern Pakistan. Nothing is added, and nothing is taken out beyond the wax and pollen caught by the strainer. The 250g jar is the smaller of the two sizes, which makes it the sensible one for trying a harvest you have not tasted before.
Wildflower honey takes its character from whatever was flowering when the bees worked, so colour and taste move from one season to the next. That variation is what an unblended honey looks like; a jar that tastes identical every time has usually been mixed to make it so.

Keep it off the top of the stove and out of a sunlit window: steady room temperature is what raw honey wants, and repeated warming is what dulls it. Use a dry spoon each time, because water carried into the jar is the one thing that will spoil honey that would otherwise keep for years. Stirred into tea once it has cooled a little, rather than boiling, it keeps its aroma.
