One ingredient: raw wildflower honey from the meadows of northern Pakistan. Nothing added, nothing removed beyond what the strainer catches. The 500g jar is the size most households settle on once they know they like it.
Wildflower honey takes its character from whatever was in flower when the bees worked, so colour and taste shift from season to season. That variation is the mark of an unblended honey; a jar that tastes the same every time has usually been mixed to make it so.
If the jar sets solid, read why honey crystallises. To compare varieties, see the types of honey in Pakistan, or try the smaller 250g jar first.
Keep the jar at steady room temperature, away from the stove and out of direct sun. Use a dry spoon each time: water carried in is the one thing that will spoil honey which would otherwise keep for years. Stir it into tea after it has cooled a little rather than while it is boiling, and the aroma survives.
The 500g jar is the one most households settle on. If you have not tried this harvest before, the 250g jar is the cheaper way to find out whether you like it.
